Jerusalem artichokes and parsnip squid

Yesterday I pulled up the first of this season’s jerusalem artichokes.  The plant that I chose had 4 tubers, 2 of which were fist sized.

I also dug up a parsnip.  It was quite large and looked like a squid.  so much so that Ben decided to remove some of its extra roots and make it into a killer squid!

They all went into a sausage and root vegetable stew – very tasty indeed.
