Pumpkin seeds

Today I removed the seeds from the Austrian oil seed pumpkins.  I’ve been meaning to do this for a while now – basically since they were harvested!  But today it actually happened.  From 11 pumpkins I took 1.311kg of seeds. These were rinsed in a colander, spread on oven trays and baked at 100°C for about 90 minutes.  They are delicious – nutty and crunchy.

These are the pumpkins.  The ones that were entirely green had no ripe seeds.
