10 May I made 14 bottles of lemon/ginger cordial.
Fiona P. gave me the lemons – she has a fantastic tree.
The cordial tastes great!
Recipe:
Bring 6l water to the boil.
Scrub 40 lemons, zest about 10 of them.
Put them all in the pot of boiling water for about 1minute, remove the lemons.
Add 3.5kg sugar, 6T ground ginger and the chopped lemon zest to the water.
Juice the lemons.
When the sugar water is boiling, add the lemon juice (~1.25l) and return to the boil.
Remove from heat and pour into sterilised bottles.
Makes 14 x 700ml bottles.
