We opened a Leiden cheese that was ready to eat on 6 July (cheese number 25). It was so keen to be eaten, it was coming out of the wax to meet us. The wax had domed with gas. When I cut the wax a very pungent gas burst out. The cheese is delicious – very creamy and strong, with a lot of gas holes inside it.
Note the cheese coming out the side – very hard and dry, and the dome shape of the wax.
