Yams and artichokes

Over the last few days, I’ve cut back the Jerusalem artichokes. This was a much bigger task than I had anticipated! I did harvest 1/2 a bucket of artichokes from the path around the bed and a large bowl of New Zealand yams (oca – Oxalis tuberosa) from amongst the artichokes and asparagus.

These yams are an interesting vegetable – according to Wikipedia they are mainly grown by Quechua and Aymara farmers in the Andes. In the Central Andean region the area planted in yams is second only to the potato.
